Healthy Turkey Recipe
In just two short weeks we come upon Thanksgiving... Turkey Day. Turkey is often the main course and what Thanksgiving dinner is all about. So messing with the turkey recipe can be a scary thing... but last year I gave it a shot and tried a new, healthier version, or the turkey. It went off incredible and everyone (including my children) LOVED it!
ROASTED TURKEY Ingredients: 2 tsp sea salt 2 Tbsp ground black pepper 2 tsp basil leaves 1 tsp thyme leaves 2 tsp oregano 1 tsp sage
1.5 onions (cut into 1/4 inch cubes) 1 garlic head (diced) 3 carrots (cut into 1/2 inch pieces) 3 celery stalks (cut into 1/2 inch pieces) 2 medium leeks (cut into 1/4 inch pieces) 2 Tbsp Parsley 1/2 cup chicken broth 3 cups chicken broth
Directions: 1. Preheat the oven to 450 degrees F and place rack in lowest position. 2. Combine the salt, pepper, basil, thyme, oregano and sage in a small bowl and mix. 3. Remove the turkey neck and everything from inside the turkey - rinse the turkey and pat dry. 4. Slide your hand under the first layer of skin of the turkey breast without breaking the skin. Loosen it. Rub the mixture under that first layer of skin, on the outside of the skin, and in the cavity. 5. Combine the rest of the chopped ingredients in a bowl and mix well with the 1/2 cup chicken broth. 6. Place mixture in turkey and tie legs together. 7. Baste the turkey with 1 cup chicken broth and then pour the remainder of the broth into the bottom of the roasting pan. 8. Tent with aluminum foil. 9. Bake at 450 for 30 mins and then reduce the heat to 325 for another 3 hours or so. Continue to baste the turkey every 30 mins with the juices at the bottom of the pan. 10. Remove the foil after 2.5 hours. When the thigh reads 180 degrees F, then it is ready!
