Sweet Potato Pancakes
Oh man... My lunch was A M A Z I N G after my leg workout today! I can't believe I haven't made these in over a year!
Here is my sweet potato pancake recipe:
✔️ 1 cup mashed sweet potato ✔️ 1/4 cup flax meal ✔️ 5 egg whites ✔️ 1 Tbsp chia seeds Add in a splash of vanilla extract and cinnamon to taste
Mix all ingredients together and cook like a pancake! I added almond butter on top as well as drizzled some honey over it as well. Seriously...#YUM This is a very healthy way to enjoy pancakes with the family. And let me tell you, after two low carb days in a row, my muscles needed this today!
