Snacks for Memorial Day

Memorial Day is the kick off of the summer season for many of us. BBQ’s, camping trips, family get togethers, and more - often the poor food choice options are everywhere.  Here’s the thing, friends- we’ve got to have balance in life and enjoy treats on occasion! You will never hear me preach something I don’t follow and that’s why Carb Cycling and Intermittent Fasting as a lifestyle works so well for me and hundreds of clients who do the same.  

I won’t tell you to not enjoy your favorite dessert or drink or cheeseburger off the grill to say hello to summer, I would LOVE to teach you how to do this in a sustainable way that allows you enjoy and not have regrets and to not over-do it!

That said, today I want to share a few great “healthy” snacks to consider having on had as you get out and celebrate this weekend. Whether at the campground, around the BBQ or out on the town, these are great options to have with you so you don’t go off the rails:

Skinny Cocktails (try this one from http://www.peanutbutterandpeppers.com)

Skinny Watermelon Mojito

Ingredients

  • 1 cup watermelon, seeded roughly chopped

  • ½ lime, juiced

  • 4 mint leaves

  • ice

  • 1 fl. oz. Bacardi Rum (use white rum)

  • club soda

Instructions

  1. In a blender, process watermelon until liquefied. Pour into a glass.

  2. In a small bowl, muddle together the lime juice and mint leaves. Pour over the top of the watermelon. Fill the glass with ice and top with rum and club soda.

  3. Garnish with mint leaves and watermelon wedge if desired.

  4. Note: If the water melon is not to sweet, add ½ tsp. of fine sugar.

Trail Mix with Dried Fruit to control that sweet/salty craving (you could even throw in a few dark chocolate pieces to satisfy that chocolate craving).  Here’s a great one:

Clean Deviled eggs

Recipe is for 12 eggs

Hard Boil 12 eggs (cool in ice-cold water for easy peeling) peel and prepare  filling:

Filling: Egg Yokes 1/3 cup Greek yogurt 1/2 tbsp vinegar 1 tbsp mustard 1 tsp honey 1 tsp salt Dash of black pepper Paprika (for dash on top)

Mix the greek yogurt, vinegar, mustard, honey, salt and pepper together with egg yoke and fill into hard boiled whites.  Finish with a dash of paprika on top and enjoy!
