Low Carb Pancakes

You asked for it! You got it!

Pancakes are a staple of mine… like literally 4 times a week on my higher carb intake days. However, on low carb days, I try to stay away from them for the obvious reasons…. CARBS. BUT last week on a low carb day I was craving pancakes! Sooooo this is what I through together and they came out A M A Z I N G

Low Carb Pancakes

Ingredients

  • 2 Tbsp Coconut Flour (I love Bob’s Red Mill) 
  • 1 Egg
  • ½ cup Egg Whites
  • 1 scoop NLA for Her Chocolate Éclair Protein Powder (use code JENNY20 for 20% off your purchase on their site: nlaforher.com)
  • 2 scoops Collagen Peptides (I love Vital Protein)
  • Splash of Unsweetened Almond Milk

Topping

  • 2 Tbsp Organic Natural Peanut Butter (make sure the ingredients are ONLY peanuts)

Directions

Mix all ingredients together in a bowl and let sit 60-90 seconds. Use a non-stick spray and pour in to 3-4 mini pancakes. Be sure not to overcook!

Macros w/out the topping:

  • Carbs | 4g
  • Fat | 7g
  • Protein | 48g
  • Calories | 270

Macros w/the peanut butter topping:

  • Carbs | 11g
  • Fat | 22g
  • Protein | 57g
  • Calories | 470

This was by far the best low carb pancakes I have ever made! And check out those macros… perfect for a low carb day.
