Fresh seasons= fresh food! There is no better time than spring and summer to make your salads the best meal of your day. Salads can be basic and bland from time to time but they certainly don’t have to be. As fresh produce becomes more available and Farmers Market’s pop back up for the impending warm season, be sure to get creative in the kitchen and trust your gut! Some of the best fresh salad and meal creations come by way of trying something outside the box with foods you love! Today, I want to share with you one of my newest salad loves. A friend of mine whipped this filling and flavorful kale salad up when I was on vacation last week and it was so good I had to bring it home and recreate! So jump on this recipe this week and add it to your menu. I promise you won’t regret it!
Kale, Avocado & Tangerine Sesame Salad
3 Cups Kale (chopped and massaged— just like it sounds, massage the kale with your hands for 2-3 minutes) 2 Tangerines peeled 1 Large Ripe Avocado 1 1/2 Teaspoons of black sesame seeds 3 Grilled Chicken Breasts
For the Dressing: 3 TBSP of Rice White Vinegar 2 TBSP Sesame Oil 1 TBSP Soy Sauce 1 TSP Honey Salt & Pepper
Place Kale in a large bowl & drizzle w/olive oil and pinch of sea salt. Massage the oil and salt into the kale and add the tangerines and avocado. Add the grilled chicken either whole pieces or cut into cubes and add. Toss all together and sprinkle sesame seeds on top- Enjoy!
