Protein Pumpkin Spice Cookies
Tuesday I shared a great clean Hors d'oeuvre option you can make easily and bring along to your Easter celebration or make to have on hand when you host guests! Truly, this is a fan favorite in my experience and many times my guests have no clue how much healthier this variation of Deviled Eggs is for them. Today, I want to share a recipe that falls into my favorite category— Treats!
Yes, if it's up to me, my “cheats” typically align with my sweet tooth. With that in mind it has become a mission of mine to find truly delicious clean (sweet) cheat options that leave me feeling fulfilled and not longing for leftover easter rolls or candy that many of us crave when we skip the traditional holiday desserts.
One of my dear friends and clients, blessed me with this absolutely delicious and truly fulfilling dessert that hits the spot but also falls right in line with my nutrition plan and I can work in to meet my macros!
This Easter, I encourage you to try integrating some “clean cheat” options, whether it be this recipe or many of the others you can find on Pinterest or healthy living blogs. In the information age we live in, there are so many options right at our fingertips, and many times they are not only better for you, but often better tasting and leave you without the bloat or regret from over indulgences. Gluten Free Protein Pumpkin Spice Cookies ---> Recipe by Carli Eich
Ingredients: 1/2 cup of almond butter 1/2 cup of canned pure pumpkin 1/4 cup light agave nectar light syrup or honey 1/3 cup of egg whites 1 very ripe banana
Then add in 2 scoops vanilla whey protein powder (I use NLA for Her - code JENNY20 to get 20% off @ www.nlaforher.com) 1/2 teaspoon vanilla extract 1 cup old fashioned oatmeal 2 cups GROUND old fashioned oatmeal 1 teaspoon baking soda 2 teaspoons cinnamon 1/2 teaspoon sea salt 2 cups mix in of choice (walnuts, pecans, almonds)
Directions: The batter is going to be really gooey. This is a good thing. Use and ice cream scooper to scoop out batter and place on a cookie sheet. I like to make large cookies, however you can make them whatever size you would like. Heat oven to 350 degrees bake for 9 minutes- This recipe yields 16 cookies (large).
PS. You can also mix a little bit of almond butter and agave or honey and drizzle on top!
