Low Carb Pancakes

6360624_orig Ok friends... it's day TWO of low carb for me and I am MISSING my pancakes so I decided to pull together a random low carb pancake! This is just to hold me over until tomorrow when I get my normal oatmeal or sweet potato pancakes for FEAST day (or high carb day)!

I completely made this up and honestly, it didn't turn out too bad! It was a little dry so I should have added some almond milk or water in.... but here you go!

2 Tbsp Coconut Flour (I use Bob's Red Mill) 1/2 Cup Egg Whites 1 Egg 1 Scoop Vanilla Protein Powder (I use NLA for Her)

I mixed all the ingredients together and then threw one tablespoon of almond butter on top! This totally satisfied my pancake urge today.
